Recipes from the “Best Teen Chef”

Jicama Salad:
Yield 4

1/2 cold jicama cut into match sticks
1/2 cold avocado cubed
2 oranges
1/4 cold cantaloupe cubed
1/2 cup fresh strawberries sliced
1/4 cup thinly sliced red onion
salt and pepper to taste

Combine the jicama, avocado, strawberries, cantaloupe and red onion in
a bowl. Segment the oranges and add them to the bowl squeezing the
remaining orange juice pulp into the bowl. Add salt and pepper and enjoy!

Tasty Steamed & Sautéed Veggies
Yield 4

1/2 head of cauliflower
1/2 head broccoli
1 large zucchini
3 carrots
1/4 pound asparagus
1 tablespoon butter
1 tablespoon olive oil
salt and pepper to taste

Cut all the vegetables into bite sized pieces. Steam all but the zucchini for 2 minutes in the microwave. Melt 1 tablespoon butter in a sauté pan with 1 tablespoon olive oil. Sauté the vegetables until golden brown and tender. Add salt and pepper and enjoy!
